Ром Rochel Bay выпускается знаменитой французской дистиллерией A. E. Dor, которая была основана в 1858 году Амеде-Эдуардом Дором. Банковский служащий долгие годы мечтал основать собственный коньячный дом, и на воплощение этой идеи у него ушло более 20 лет. Ценные спирты, созданные еще самим основоположником компании, до сих пор хранятся в подвалах дома, однако Амеде-Эдуард никогда не хотел ограничиваться лишь производством коньяка. Мысль об изготовлении рома возникла у предпринимателя после путешествия по странам Карибского бассейна: вдохновленный местными красотами и культурой, он решил изготавливать алкоголь в соответствии с аутентичными рецептурами экзотических широт.
Основой рома Рошель Бэй служат спирты сахарного тростника с экологически чистых плантаций Тринидад и Тобаго. Его изготавливают из мелассы путем ферментации, перегонки и выдержки в дубовых барриках от 3 месяцев до 8 лет. Для этой цели используются новые емкости и бочки из-под коньяка и рома. Продукция обладает насыщенным золотисто-янтарным или каштаново-коричневым оттенком. В богатом ванильном аромате проступают мотивы сливочной карамели и дуба. Полнотелый вкус раскрывается многослойными акцентами восточных специй, шоколада с орехами, ирисок и сухофруктов, композиция завершается продолжительным согревающим послевкусием. Ром Rochel Bay обладает крепостью 40%. Его предпочтительно пить при 15-18 °C в завершение застолья. Алкоголь будет одинаково хорош в чистом виде и в роли компонента шотов и лонг-дринков. Приобрести его можно в прямоугольных бутылках с наклеенными по диагонали этикетками.

Такое название оно получило от английского названия этого дерева «Bay tree» или «Bay rum tree». К лавру благородному (Laurus nobilis) это дерево не имеет никакого ботанического отношения. Лимонный душистый перец – Pimenta racemosa Bay Rum или West Indian Bay Tree.
